Beta-Galactosidases of Pseudoalteromonas sp. – Characteristics and application for lactose hydrolysis and galactopyranosides synthesis

Beta-galactosidase [EC 3.2.1.23] is an enzyme that catalyzes the hydrolysis of O-glycosidic linkages in galactosides. It has biotechnological applications in the dairy industry for the production of milk with a low content of lactose and galactooligosacharides for use in healthy food. The transgalactosylation activity of beta-galactosidase can be used in the synthesis of alkyl galactopyranosides. Due to the fact that conditions of technological milk processing require refrigeration temperature, scientists search for cold-active enzymes that display an attractive alternative to industrially applicable -galactosidase derived from mesophilic yeast Kluyveromyces lactis. Three coldactive beta-galactosidases from psychrotolerant, rod-shaped and Gram-negative bacteria classified as Pseudoalteromonas haloplanktis TAE79, Pseudoalteromonas sp. TAE 79b and Pseudoalteromonas sp. 22b were found and characterized. These enzymes can be potentially used in the industrial hydrolysis of lactose and in alkyl galactopyranosides synthesis.
